Whole30 Coconut Parfait

Yum yum yum! NOTHING screams summer like fresh berries from the local farmer's market and cooling foods to enjoy like yogurt! In today's blog post, I'm going to share with you one of my creative Whole30 spins on a classic dessert that will have your mouth watering and your body feeling oh so amazing!


For those of you who are unfamiliar with what a parfait is, it's a classic french dessert that consists of layering custard with fresh fruit in a glass, that displays its colorful layers. With the addition of a crunchy texture layer, most commonly used is granola, and viola! you have yourself a beautiful parfait!


So with a few swaps and some locally-sourced ingredients, and we'll have ourselves a nutrient-dense piece of art that is equally delicious as it is nourishing. This, my friends, is my classic summertime meal that I enjoy when berry season is at its peak, and when all I'm craving is a cool dish to enjoy during those hot summer months! Best part: no cooking involved and it's Whole30 compliant!

So let's get right into it!


WHOLE30 COCONUT YOGURT PARFAIT

INGREDIENTS:

Coconut yogurt, vanilla (any flavor you prefer is just fine)

Raw cacao nibs

Fresh strawberries

Fresh blueberries

Optional: honey & cinnamon

DIRECTIONS:

Wash fresh berries and cube strawberries.


Take any glass from your cupboard (I use wine glasses and rocks glasses) and begin parfait by coating the bottom of the glass with a few spoonfuls of coconut yogurt.


Add in layer of both strawberries and blueberries, on top of coconut yogurt.


Cover berries with a layer of coconut yogurt.


Top coconut yogurt with raw cacao nibs; repeat steps 1-4 as many times as you'd like, depending on size of glass and how hungry you are.


Optional step: top parfait with a sprinkle of cinnamon and a thin glaze of your local honey for a bit of sweet, which would make this non-compliant with Whole30.

So what I've done is:

-swapped the custard for a similar textured option with the coconut yogurt. I am obsessed with a local brand here called Coconut Culture. If you live in the San Diego area, and you want a clean option for yogurt but have struggled to find one, look no further. They are featured at local farmer's markets as well as a few local shops, so check them out! Otherwise, you can use whatever yogurt you prefer for this recipe.


-swapped out granola for a similar crunchy texture with the raw cacao nibs. This gives it the crunch and semi-bitter taste that cuts perfectly into the creamy texture and taste of the yogurt, and nevermind the crazy health benefits of raw cacao....high in dietary fiber and iron, loaded with antioxidants, solid source of flavonoids, which promote heart and brain health, promotes cellular health AND prevents tooth decay....all the while giving you that chocolate-y goodness without the sugar!


-kept with the berries from a traditional parfait, to add the natural sweetness these fruits lend, especially when its the peak of their season and ripeness!

Add this recipe into your morning breakfast rotation, enjoy it as a mid-afternoon snack, or savour the flavors as an after-dinner treat. It gives you all the flavor combos your taste buds are craving, while healing the gut with the probiotics from the yogurt, and all the healing benefits from the cacao nibs and berries...its a win win all around, friends!
