Paleo & Budget-Friendly Banana Bread

A major part of staying well is fueling your body with wholesome, nourishing foods. Let me start off by saying I am not here to tell you how that should translate to YOU- every body is different and everyone needs to tap into that innate all-knowing called intuition and learn what works best for you and your life.

Especially in this time in our lives with being quarantined and cooking more than ever, we may be searching for recipes that are easy, quick, and affordable, that can yield a generous serving portion. We may be also trying to eat better, now that we have more time to focus on what we're consuming since life has slowed down a bit. Let me share with you what works for me, and how I am staying on top of nourishing my body well with top-notch healing foods that are affordable, with ingredients you may already have in your pantry.

For me, a paleo lifestyle fits all the requirements I need to sustain my best life. If you are unfamiliar with paleo eating, it includes whole fruits, veggies, meats, nuts, seeds, and healthy fats. I tend to stay away from dairy, gluten, grains, processed sugars, and CHEMICALS, and this is emphasized because this is my number one thing I try to avoid in anything that I eat (which is why sticking to paleo is a great choice for me).

2019's goal was to maintain an almost 100% organic diet, as well as toxic-free products for my body and home. I am just about there with this goal, and I can tell you achieving this has absolutely kept me out of the doctor's office and free of any prescription drugs for quite a few years now.

I have had SO many people ask me about what I'm eating, and I'm happy to share my recipes that I find or that have been staples for me, as I cook just about 80% of the food I let's start with my most popular and most shared recipe: homemade banana bread.

Bananas have such tremendous health benefits, including:

-healing fuel for the liver

-high levels of vitamin C & B6

-tremendous source of brain food (excellent for chronic thinkers out there!)

-regulates blood sugar

-contains powerful antioxidants

-packed with minerals such as potassium & copper

-helps build strong muscles

This quick and super easy recipe is my breakfast most mornings and gives me the fuel I need to have a strong start to my day. There are many variations to this recipe, which I'll include, so you can tailor this to whatever is best for your needs and taste.


Serves: 6

Prep time: 10 minutes

Cooking time: 50-55 minutes


3-4 medium-sized ripe bananas

1/2 cup avocado oil (or coconut oil, or applesauce)

3 eggs

2 tsp cinnamon

1 tsp baking powder

1/2 tsp baking soda

2 tsp vanilla extract

1 cup choice flour ( I use coconut flour, but use what you prefer)

OPTIONAL: 1/4 cup raw cacao nibs (I mean, why not add more superfoods into this recipe!)

**I do not use sweetener, as the bananas are sweet enough for me...but to add sweetener to this recipe, simply add 1/2 cup of maple syrup or honey.


Heat the oven to 375

Grease a loaf pan with ghee or coconut oil

Mix together all wet ingredients (a hand blender is perfect, but a regular spoon will do, too), then add in dry ingredients, mixing in the flour last

PLEASE NOTE: mix in 1/2 cup of flour at a time. Depending on what type of flour you use, you will yield different thickness consistencies. The thickness of your batter should have a very slight resistance when you are mixing, and it should be able to drop off the spoon in clumps, without being too runny.

Add mixture to pan loaf and cook 50-55 minutes

Pierce loaf with a knife to make sure it's cooked through (no residue should be on knife)

Cool for one hour

Cut into 6 slices and enjoy!

Once the bread is completely cooled, place in the fridge to keep fresh.

Will last for up to one week if properly stored at the right temperature.
